Carmine's Pizzeria - Dallas
Like many of the great pizzerias around Dallas-Fort Worth, Carmine's Pizzeria sits in a strip alongside a 7-11, an AutoZone and a dry cleaner. Just as it has for over 30 years. Until my recent visit there, I'd guess the last time I was in there was some time in the mid-'90s. I have to say, it hasn't changed much, in that good way. It's hard to keep any business going for that long without a consistently good product and Carmine's has it.
The by the slice pieces I had where were lightly sauced and lightly cheesed, leaving the toppings and veggies to be the star of the show. The crust was crispy on the bottom and soft and chewy in the middle the way it ought to be.
Carmine's is worth the Quest.
